Fire Island is our summer happy place – with a focus on family and friends, frolicking from the bay to the beach, practicing yoga, biking, and reading, and reconnecting.
My dear friend Jacqui came to visit us from Boston. Without question, we knew she would bless us with her healthy, gourmet cookies – she’s a pro in the kitchen.
These treats are so simple to create yourself. Beware, they are truly delicious, so please pace yourself. They also make for a great energizing snack on the go.
Pumpkin Seed Cookies
Recipe
2 cups pumpkin seeds
¼ cup maple syrup
¼ cup dark chocolate chips – optional
Instructions
Preheat oven to 350 degrees
Ground pumpkin seeds in food processor
Add maple syrup mixed with ground pumpkin seeds
Add chocolate chips to mixture and pulse in food processor
Scoop tbsp on a cookie sheet lined with parchment paper
Place tray in oven and bake for 8 minutes
Before they cool, pat down to form flat cookies
Creates approximately 24 cookies
Walnut Brownie Bites
Recipe
18 medjool dates
1 cup walnuts
¼ cup cacao powder
Instructions
Place walnuts in the food processor until finely ground
Add medjool dates
Add cacao powder
Mix all ingredients
Scoop tbsp and place on cookie sheet lined with parchment paper
Refrigerate to chill for 20 minutes
Creates approximately 20 bites
Hempseed Bars
Recipe
½ cup coconut oil
½ cup non-dairy milk
2 tsp vanilla extract
1 cup coconut or brown sugar
1 cup dark chocolate chips
2 cups gluten-free oats
1 tsp baking soda
1 tsp baking powder
½ tsp coarse salt
Instructions
Preheat oven to 350 degrees
Combine all ingredients in the food processor
Place the mixture on a cookie sheet lined with parchment paper
Take parchment paper over mixture and press down with hands to spread on cookie sheet – use rolling pin to spread evenly on tray
Bake for 8 minutes
Allow to cool
Slice into squares
