Millet Veggie Patties
Millet is a gluten-free, alkaline, nutritious, and ancient grain. It’s a great alternative to wheat and rice. If you're being extra careful with your blood sugar, trying to reduce inflammation, and want to add more fiber, then millet is your answer.
Millet has not been my go-to for grain consumption, but lately I've been more sensitive to grains and still want to have options – delicious options that keep me on my healthy nutrition journey.
Millet is an amazing grain to add to your meals. It’s more of a drier grain, so adding the chutney makes for a great balance. This patty (or “burger”) is a treat. It’s loaded with seasoning, minerals, herbs, and light – you gotta try these patties.
Recipe
1 cup millet – rinsed well
2 cups water
Salt and pepper to taste
3 tsp olive oil or ghee
1 shallot – minced
6 cups baby spinach or parsley – chopped
2 carrots – peeled and shredded
2 garlic cloves – minced
2 tsp curry powder
¼ cup plain yogurt
1 egg
2 tbsp fresh or dry cilantro – minced
Chutney for Dipping or Topping
Top with your favorite yogurt
Salt and pepper
Chili flakes
Squeeze of lemon
Instructions
Preheat oven to 350°
Line a baking sheet with parchment paper
Combine 1 cup millet, 2 cups water, and ½ tsp salt in saucepan and bring to simmer over medium heat
Reduce heat to low, cover and simmer until grains are tender and liquid is absorbed – 15 to 20 minutes
Turn off heat and let millet sit covered for 10 minutes
Transfer millet to a large bowl
Heat 1 tbsp oil in large skillet over medium heat
Add shallot and cook until softened – 3 minutes
Stir in carrots and spinach or parsley and cook for 2 minutes
Stir in garlic, curry powder, ½ tsp salt, ¼ tsp black pepper and cook for 30 seconds
Transfer mixture into the bowl with millet
In the bowl, add yogurt, egg, cilantro, and fold until well-mixed
With a ⅓ measuring cup, scoop the mixture and form into ½ inch thick patties and place on a sheet – you can pat them down to flatten with your hands
Best to refrigerate the patties for 30 minutes to firm up
Drizzle the patties with olive oil and bake for 30 minutes or until the edges are crispy

I love having homemade burger patties ready to take on the go. The chutney is a cherry on top. Make it your own. Dips will make your patty into a mouth-watering experience.
Curry is mentioned in the recipe, although you can substitute the spices with options such as fennel, coriander, or ginger. I love curry during the winter months, although the other spices will add more hydrating and cooling tastes during the warmer seasons.
You can substitute any yogurt to make it dairy-free.
